What a day
You never know what a day holds.
Thankfully last night I had taken my shower. So all I had to do this morning was get dressed, get the girls dressed, and get all 4 of us in the car. I dropped Rob at the church, and headed to walmart.
I was prepping to cook for Kotulas. I needed to buy salad ingredients, 3 whole chickens, and Velveeta cheese, bread, etc.  I couldn’t decide on the bread so ended up with a plain loaf of Italian sliced bread for 1.33 when I wanted to buy the seed-topped bread. I forgot the Velveeta because the foil pans are in house- wares, not in the baking aisle. whatever walmart!
I get home at 10.21 am, with plenty of time to cook the whole chickens. There was a message on the machine. Lynn had a miscarriage and was at the hospital right now. I just broke down and sobbed for a minute. I got all the groceries in, grabbed a quickie lunch for the 3 of us girls, grabbed a diaper bag of toys, and headed back to church to pick up Rob. Thankfully Margaret offered to watch the girls. Rob and I head to the hospital. Lynn agreed to see us and we just hugged each other and cried. I still want to cry for her.
Anyway, I ended up offering to make dinner for them too. So back to Walmart to get the Velveeta, more salad ingredients, and the seeded bread I’d wanted in the first place. I get home, and realize I don’t exactly have a way to cook these 3 chickens which I know I need. So I just prayed and the Lord reminded me that I owned a pressure canner which has direction for cooking meat. So the 3 whole fryers fit perfectly in the cooker, and they were done and ready to bone in an hour.  While they cooked, I got the brownies cooked and the veggies saute’d. The chicken rotel recipe kept growing and growing and it was a good thing that I had the canner/cooker out because that is where I mixed the whole thing together. No way would 1.5 pound of spaghetti (now cooked) and 2 lb of velveeta fit in my Revere “stock” pot. That stock pot has never been deep enough, but that’s beside the point. So I ended up with two 13×9 pans of Chicken Rotel, one 8×8 pan and one 11×7 pan. I made two 8×8 pans of salad. I took the 2 loaves of bread and divided each in thirds, so each family got 1/3 plain and 1/3 seeded bread.
So, I actually got all that done from 1pm until 430 pm. 430 was the time on the car clock when I was heading out to pick up Rob from the church again and start my version of “meals on wheels” delivery.
The real news is that Rachel ate 3 helpings of Rotel chicken and Alexis ate none.
